Moussaka is a typical Greek dish consisting of 3 layers in which the base layer contain slices of potato, zucchini and eegplant. The middle layer consist of minced meat prepared with onions, spices and tomato sauce. We use around 70% beef and 30% pork. The top layer consist of bechamel sauce but in our case it also contain eegs and cheese (usually kefalotyri).
Keftedakia are meatballs which are flavored with a variety of herbs and species and fried in olive oil or sunflower oil. Our recipe includes onions, garlic, cumin, salt, pepper and mint. To achieve the desired texture we also add bread and egg.
Spanakopita is a traditional Greek spinach pie which in most recipes, like ours, also contain feta cheese. For this recipe we make our own filo. And for the filling of the pie, our mix, besides spinach, also contain a small amount of endive or lettuce. Our recipe also includes extra virgin olive oil, fresh and dry dile, egg, salt and pepper.
Greek salad is made with cucumber, tomato, bell pepper, onions, olives, extra virgin olive oil, feta and oregano.
Spanakopitakia are small triangle-shaped spinach pies. Our recipe for the filling is the same as in the spanakopita described above. The main difference here is the filo wich in this case we buy from the supermarket.
Tyropitakia is a triangle-shaped cheese pie. The filling contains a mix of feta and ricotta cheese, eggs, a bit of extra virgin olive oil and a variety of species.
Pastisio is also a traditional Greek dish in which the top and the middle layer resembles the ones in the Moussaka but the base layer is made with pasta, penne or similar.
Kimadopitakia are small triangle-shaped pies filled with spiced minced meat which is prepared similar to the recipe for moussaka or pastisio but without tomato sauce.
Tzatziki is made with yoghurt, cucumber, garlic and dile. We use in our recipe fresh and dry dile, extra virgin olive oil, salt, pepper and a bit of lemon.
Baklava is a layered pastry dessert typical in Greece and in other countries around the mediterranean sea. In our recipe, the filling is made with walnuts (90%) and almonds (10%) spiced with sinamon and clove. For the sirop we use sugar and Greek flower honey.
Portokalopita is an old-fashioned Greek orange cake made with orange zest, yogurt, olive oil, orange juice and dried crumbled filo. It is soaked in a delicious orange scented syrup.
Melomakarona is an egg-shaped Greek dessert made mainly from flour, olive oil, and honey. Along with the kourabies it is a traditional dessert prepared primarily during the Christmas holiday season.
